Creamy Brown Rice Horchata

Ingredients:

1 cup uncooked brown basmati rice

2/3 cup raw almonds

1 cinnamon stick

4 cups water

1 tablespoon pure maple syrup

Ice or water

Ground cinnamon to taste

Directions:

  • Rinse rice with cool water
  • Place rice, almonds, cinnamon stick, and water in a container with a lid. Let the mixture soak together overnight for at least 8 hours
  • Once the overnight soaking is complete, pour the entire mixture and the maple syrup into a blender and blend until smooth
  • Pour blended mixture through a cheesecloth or a fine mesh strainer
  • To serve right away, add blended mixture back into the blender with ice. Blend and serve
  • To serve later, add mixture back into blender with ½ cup of water. Chill in fridge.
  • Pour into a cup with ice and sprinkle cinnamon on top to taste
